3 lbs. ground beef
1 stick butter (8Tbl)
3 stalks finely chopped celery
2 medium size chopped onions
3 cans 8 oz tomato sauce (24 oz)
2 Tbl any red wine
3 Tbl nutmeg
2 t cinnamon
¼ t salt
¼ t pepper
1 stick of cinnamon

STEP ONE: Melt butter, saute celery and onions for about 5 minutes. Slowly add the ground beef until browned. Add tomato sauce, wine, spices and cinnamon stick. Mix occasionally, leave on simmer, uncovered as you prepare the pasta.

1 lb thick macaroni (from Greek store)
1 stick butter melted
5 eggs, beaten for 1 minute
5 Tbl grated Greek cheese (Mozithra)
Boil large pot of water and add a little salt, boil macaroni for about 10 minutes. Drain, set aside. In a very large bowl combine macaroni, melted butter, beaten eggs and cheese. Then, add the meat to above, mix lightly all together. Remove the cinnamon stick.

Pre-heat oven to 350 and use middle rack.

Butter a pan approximately 11 x 14, butter it well. Pour the meat mixture into the buttered pan. Sprinkle the top with a little more cinnamon and nutmeg and the cheese. Bake for 10 minutes. Take out of oven and set aside while you make topping which is the next step.

1 cup butter (2 sticks) melted butter
1 cup sifted flour
6 cups whole milk, warm the milk, do NOT boil, just warm
1 t salt
6 large eggs hand beaten
Melt butter. Add flour slowly, constantly stirring so it is smooth. Continue to add flour slowly until you have used it all. Slowly add the warm milk a little at a time, keep stirring over low heat. This must get thick, it takes about 45 minutes, be patient. Add salt and let it stand off the flame for about 10 minutes. Very slowly add the beaten eggs and keep mixing so it doesn’t curdle.

Bake about half an hour to 45 minutes until it is lightly brown on the top. Test it in the center with a toothpick to make sure it is cooked all the way through.

Let rest for a half hour if possible before serving. :)
