Serves: 8 pieces , Preparation time: 10 minutes

• 5-6 medium potatoes, sliced 1 cm thick wedges
• Knife 100% Pure Groundnut Oil
• 1 stalk spring onion, chopped
• 2 tbsp fried shallots
• 1 tsp white pepper powder
• ¼ tsp cumin powder
• ½ tbsp salt
• 1 egg, beaten
• 2 eggs, beaten for coating

Cooking steps:
1. Fry the sliced potatoes on low heat until they are soft and a light golden brown. Drain them and mash in a bowl before adding the Chinese celery, fried shallots, pepper, cumin powder, egg, salt, and sugar. Mix well.

2. Knead the dough with hands and shape into big round balls. Press to flatten the balls slightly to form a patty.

3. Heat oil on high-medium heat to fry the patties.

4. Coat each patty in egg and put them to fry immediately. The patties will float to the surface when they are ready. Fry until a deep golden brown.

5. Drain and cool on a wire rack and serve hot
