I am sharing you my version of "TOKWA'T BABOY RECIPE" na talaga namang mas pinasarap!!! True that it may take some extra work but for sure it really worth it! My family and friends love this version as well, hope you'll love it too. Bon appetit!!! All ingredients are optional, modify as per your liking. TAKE EVERYTHING IN MODERATION. "HEALTH IS WEALTH"

TOKWA'T BABOY
INGREDIENTS:
I - PARBOIL:
WATER - enough to submerge all ingredients
1 tbsp - coarse salt
2 tbsp - vinegar
300 grams - PIG EARS (2pcs)
450 grams - PORK BELLY

II - PRESSURE COOKER| SIMMERING
* parboiled PIG EARS + PORK BELLY
1/3 cup - garlic
4 pcs - dried bay leaves
1 tbsp - coarse salt
1 tbsp - black peppercorns
1 tsp - brown sugar
1 tbsp - cooking ricewine
12 cups - water
--------------------------
4 cups - cooking oil for deep frying
720 grams - To Fu (Beancurd, dry with paper kitchen towel)

III - TOKWA'T BABOY SAUCE:
1/2 cup pork broth
1 tbsp - brown sugar
1 tsp - ground black pepper
1/2 cup - vinegar
2 tbsp - soy sauce
1 tbsp - liquid seasoning
1 to 2 tbsp - spicy chilis
2/3 cup - shallots
1/3 cup - white onion
3 stalks - spring onions

w/ Pressure cooker Cooking Time: approximately 1 hour
Ordinary cooking time: approximately 1 hr & 45 minutes
