Today we are going to make this incredible veggie fajita with fresh veggies, fiber filled beans, and delicious cheese. A vegetarian or meatless dream. All for 360 calories and pack with tons of nutrients.

Veggie Fajita Sandwich
1 large red bell pepper

2 tablespoons fresh lime juice

1 tablespoon minced fresh oregano

1 tablespoon olive oil

½ teaspoon ground cumin

½ teaspoon freshly ground black pepper, divided

¼ teaspoon ground red pepper

1 (15-ounce) can unsalted black beans, rinsed and drained

Cooking spray

1 large zucchini, cut lengthwise into (1/4-inch-thick) slices

1 small red onion, cut into (1/4-inch-thick) slices

1 (12-ounce) ciabatta bread loaf, halved horizontally

¼ teaspoon kosher salt

2 ounces reduced-fat pepper-Jack cheese, shredded (about 1/2 cup)
